1st Vegan meal

The first vegan meal I attempted was guess? a success!… (Sorry i like to think I’m a poet haha) And it can be so for you as well. One of my first vegan meals was a butternut squash and lentil bowl with tahini dressing.

  • Take half a butternut squash, cut it into cubes and rub olive oil on them, roast them on a pan in the oven for 45 min on 400F
  • Boil half a cup of mixed green and red lentils for 20 min at medium
  • mix a small tin of tomato paste with garlic, cumin, coriander, pepper and chili peppers for 10 min on medium.
  • Take half a cup of tahina and add 1/4 cup water to it as well as pinch of minced garlic.

Once the butternut squash is golden and soft put in on your plate and drain the lentils. Add the lentils to the paste in the pan and stir for a few minutes. Then pour some of the paste and lentils from the pan onto your butternut squash. Add the tahini dressing and for a topping sprinke some dried cranberries and pecan nuts. Super delish!

I have just started going vegan and this was meal that was a bit of a challenge as it did take a good hour to make. However it was worth the while if you have the time. It is very hearty and healthy and you feel an over all wellness.

IF you don’t want it spicy you can just add pepper and garlic to the paste.
